Thai cuisine has become popular all over the world and most major cities have Thai restaurants and take out. For people that like to cook, Thai food recipes are a lot of fun and you can adapt them to your own tastes. Indian and Chinese influences have formed the basis of dishes in Thailand with rice and rice noodles being staples. Fish, fruit and vegetables are chosen for their freshness. Chicken is another popular main ingredient. Penang Chicken Curry (Penang Gai) is a dish from Malaysia that became a favorite Thai food recipe. The chicken is prepared with coconut milk, finely shredded basil leaves, curry paste, fish sauce, and kaffir lime leaves. Chicken can also be used in a casserole, as in Thai Chicken Casserole (Gai Kaeng). The chicken is marinated in garlic, root ginger, shallots, peanut oil, and turmeric. The spicy stock is made with cumin seeds, coriander seeds, cardamom pods, shrimp paste, shallots, chili peppers, and coconut milk.

After a hot and spicy first course, it's good to cool the palate with a bowl of ice cream. This, along with fruit, is a popular dessert, the most common flavor being coconut. Thai Coconut Ice Cream is made with coconut milk, heavy whip cream, sugar, eggs, and sweet basil leaves. This can also be made as a chocolate and ginger version. Another dessert is called Kluay Namaun or Sweet Coconut Bananas. This is so simple to make and only requires ripe bananas, coconut milk and sugar. This dish is usually served with sweet, sticky rice.

If you really want an authentic Thai experience with your Thai food recipe, you could drink as the Thais do. One of the most popular drinks is coconut water. Fruit juice is another favorite, to which basil seeds are added sometimes. Iced tea is often on the menu and Red Bull is actually an adaptation of a Thai brand.
