8 ounces of semolina wheat macaroni, cooked according to package instructions
2 stalks of celery, finely sliced
1 medium red Spanish onion, diced
1 cup of fresh parsley, chopped
1 6-ounce can of sliced olives
1 large jar of pimientos, chopped
2-3 Tablespoons of apple cider vinegar
Mayonnaise, to taste
1 dash of cayenne pepper
1 cup of grated cheddar cheese to garnish

Directions:

1.Cook the macaroni with a tablespoon of oil in the water, until done. (The oil prevents the macaroni from sticking together.) Drain well in a large colander. Set aside to cool.

2.While the macaroni is cooking, cut up the celery, onion and pimientos. Chop the parsley. Drain the olives. Put the vegetables and parsley in a large serving bowl and mix thoroughly. Add the apple cider vinegar and stir until blended.

3.Stir the cooled macaroni into the bowl, mixing throughly.
